Meet Kobraiya’s secret spice:
Chhanda Das, aka. Chhanda-di or Khuku to her friends and family, and Dida to her grandchildren. Arriving in Toronto, Canada in 1964 from Benares, India, she was a formally trained, world-class musician, and became a pillar of the Toronto-Bengali community.
She is also a self-taught master of Indian cuisine.
Her unique recipe for spicy chilli achar is the culinary sutra – the inspiration and original thread running through everything Kobraiya.
