Meet Kobraiya’s secret spice:
Chhanda Das, known as Chhanda-di or Khuku to her friends and family, and Dida to her grandchildren. She arrived in Toronto from Benares, India, in 1964, a formally trained, world-class musician who became a pillar of the Toronto-Bengali community.
She was also a self-taught master of Indian cuisine.Her spicy chilli achar is the culinary sutra, the original thread running through everything Kobraiya.
Chhanda-di passed away in September 2026.
Her recipe lives on in every batch we make.
